Nutmeg

Introduced to Sri Lanka in the 19th century, the nutmeg fruit gives two spices: the hard inner seed (nutmeg) and the lacy red membrane around it (mace). Warm, sweet and resinous - indispensable in both sweet and savoury cooking.
